Eggless Rainbow Cake without oven

Hello Lovely people!

20th this month was my birthday and as usual my excitements starts way before than that. In this pandemic I was sure that nothing is coming from outside and I am going to cook food which I love and enjoy at home only. So after lots of thinking I finalized menu which was obvious Cheese Burst Pizza and Stuffed Cheese Garlic Bread.

Cake took most of my time to decide as I am not pro and just a beginner with baking. I have tried easiest ever Biscuit cake and that’s it πŸ˜€

I thought of going level up in baking and started looking at cake recipe and one day I found my perfect recipe, Rainbow cake and oh my god it sounded so easy to make. Decision was taken and yes it was Rainbow cake for my birthday!

If I tell you frankly, it is not that easy as it sounds in the YouTube videos but yeah not difficult also. If I can make it so that you can. I will add up my tips to make more easier for you. Recipe is lengthy but worth trying it.

So for what we are waiting, let’s get started…

Ingredients:

For Cake:

  • All Purpose Flour / Maida  (2 Cups)
  • Condensed Milk (1  cup)
  • Oil  (1/4 cup)
  • Vanilla Essence (2 tbsp)
  • Baking Powder (2 tsp)
  • Baking Soda (1 tsp)
  • Salt (1/2 tsp)
  • Milk (1/2 cup )
  • Food Coloring – Red, Pink, Yellow, Blue, Green (Any color of your choice)

Tips: This will make medium size of cake not a big one so if you want bigger one just increase the ingredients in ratio given.

For Sugar Syrup:

  • Water (1cup)
  • Sugar (1/2 cup)

For Frosting:

  • Butter (2*100 gm packet)
  • Sugar (2 cup)
  • Vanilla Essence (1tbsp)

For Cake Decoration:

  • Any decoration of your choice, I chose the easiest available option like Gems & Choco chips.

Cake Recipe:

Take all dry ingredients, Maida, salt, baking powder and baking soda. Sieve them and mix them together in a bowl.

Tips: Sieve ingredients to make them lighter and all ingredients will mix better.

In a separate bowl mix condensed milk and sugar together. After mixing them a bit add the dry ingredients. Mix them well. Add oil to mixture. Now gradually add milk into mixer to get the perfect cake batter consistency.

Tips: Milk you can add as much is required, don’t go by the quantity described in recipes as it might ruin your perfect consistency.

Now take six bowls and divide batter in six equal parts. Now add color of your choice in each bowl.

Tips: what I did is the sixth one I created by mixing all colors to get marble like design. Also you can mix colors to create desired color like mixing blue and pink will make purple color. Just like we used to mix colors in school to get desired color.

Grease the pan with oil and switch on the Gas. Pour one batter into the pan. Spread it evenly on the pan and close the lid to cook it. Cook it for 3/4 minutes on medium low flame. After 3/4 minutes open the lid and check it with toothpick or knife whether batter has cooked properly or not. If not them let it cook for few more minutes and keep on checking it. Now once cooked, take out the pan cake in a plate and let it get cool down.

Tips: you must maintain gas flame to medium low, a little high flame can easily burn your cake. And it will stick to your pan bottom to disturb cooking your next batch.

Once you remove your one pan cake, clean the pan with tissue paper and grease it with oil. Now add your second batch and cook it as mentioned. You need to repeat the process till you finish all your colored batter batches.

Sugar Syrup Recipe:

Boil water and sugar in a pan till sugar dissolves. We don’t require thick sugar syrup like we make for sweets, we just need to syrup to maintain moisture of cake. Now after sugar is dissolved properly and the mixture is boiled, switch off the gas and keep the syrup aside to cool it before we use it.

Tips: just make this when you are baking your last batch so that the syrup won’t get thick. It will be on a room temperature and it will be easy for you to apply on cake evenly. 

Frosting Recipe:

Take butter which is kept on room temperature and not so soft or hard. Take a whisk and whisk it properly until the little picks form in the butter. You can use whisk or electric whisk to whisk it. Add vanilla essence to give flavor or you can completely avoid it. Now gradually in batches, little by little add sugar to it and after adding sugar keep on whisking. You need lots of patience as this can take more than 10-15 minutes to get into perfect consistency. Patience is the key here also strong hands to bear with it πŸ™‚

Tips:

  1. You can take salted or unsalted butter. I used salted one to get that little salty taste to balance sweetness.
  2. Using electric whisk, I have not tried but of course it will reduce your timings and efforts.

Setting up your cake:

To put together your cake is now easy step as you have already worked really hard and put lots of efforts. Time to get reward, yay!!

First take all your pan cakes and give them similar shape but cutting them with bowl or cutter.

Take you cake stand or plate, put a butter paper or cake foil on it. Spread some frosting and start by putting your first pan cake on it. Now spread some Sugar syrup on it and layer it with frosting. Same manner put all your layers together by repeating the steps of applying sugar syrup and spreading frosting over it.

Your cake is ready! Nopes wait we forgot to decorate it. Actually I am not giving any decoration ideas here. You can use your imagination and it is going to rock. Whether it be with piping or flowers or simple gems, your cake is going to be as awesome as it should be cause the main attraction is inside the cake. Colorful rainbow cake! Right?

Now layer your cake with frosting from all sides and try to make it even with knife or spatula.Β 

Tips:

  1. While frosting you need to check the layers are flat or not on the surface as they can ruin the shape of your cake. So if they are not flat on the surface use your frosting to make them layered properly.
  2. Decorate them when the frosting is fresh and yet to set. Once it get set, it will be difficult to stick decoration on top of it.

Garlic Bread

Quick Starter recipe of Cheese Garlic Bread without oven

Today’s recipe is Cheese Garlic bread…Not so healthy option but surely is a treat for taste buds and when you make it at home it is always better eating option.

You must have gone through different garlic bread recipes but this one is different cause you know my recipes are simple and do not require difficult ingredients or equipment. I haven’t prepared it with oven / OTG, simple pan works fine. So without further discussion let’s start our delicious recipe.

Ingredients:

  • Bread (7-8 bread slices, i have taken wheat bread, you can use multigrain / white bread too. Ideally people use French bread but i like to make from whatever is available at home so bear me.)
  • Butter (2-3 tbsp, Salted /unsalted both works, if you like a little saltier taste go for salted one)
  • Garlic cloves (5-6 medium sized cloves, again depends on how garlic loaded you want you bread to be)
  • Cheese (mozzarella /processed cheese, i have used pizza cheese, as i mentioned earlier i like to prepare with which ingredients available πŸ™‚ )
  • Capsicum (Red/Green/yellow bell peppers, i love how colourful dish it turns out. *Tip: As they say, “Eat the rainbow”, eat all the colourful vegetables & fruits. They have their own set of health benefits. I will blog about it in future. )
  • Corn (Sweet golden corns – who doesn’t love them)
  • Herbs & Red chilli flakes (As per your taste)

Recipe:

First melt butter in oven. Oops, there is no oven. No worries take out your tadka pan and use it.

Take Garlic cloves and grate them or make thin paste. Now add them to the melted butter.

Spread the mixture on the bread and add toppings of capsicum and corn on it. Now grate cheese on it.

Now heat your pan or you can use tawa too, just you need is to cover it with lid.

Brush some butter on the pan/tawa and transfer the bread slices to it. Now cover the lid and let it cook for at least 4-5 minutes and your cheesy garlic bread is ready to serve.

Serve it by sprinkling some herbs & red chilli flakes or enjoy without it. You can serve tomato ketchup to go with it but we prefer having it plain and cheesy.

Kids will love this recipe and it can be also served as starter for you kitty parties. very easy, prepared in less time – like it hardly takes 20 minutes to get all things done, if you are making it at home always healthy option then having it/order it from outside.

Domino style Cheese Burst Pizza without oven

Who doesn’t like pizza that too with loads of cheese… cheese burst. Just yummy isn’t it? Then let’s order it… oh no not outside food 😦

Hmm… let’s make it at home but pizza needs oven to bake and i have never in my life backed anything… There are different cheese available in market how i am going to choose right one for my pizza. So many question but stop worrying and start smiling as here i am gonna share my easy to make cheese burst recipe that too without oven. Sounds interesting then why to wait, let’s start πŸ™‚

Ingredients:

For Pizza Base:

  • All purpose flour (1 cup) [You can use wheat flour too – healthy version]
  • Salt (1 tsp)
  • Sugar (1 tsp)
  • Baking Soda (1/2 tsp)
  • Baking Powder (1 tsp)
  • Curd (3-4 tbsp)

For Pizza Sauce:

  • Tomato Sauce (1 tbsp)
  • Red Chilli Sauce (1 tbsp)
  • Schezwan Sauce (1 tbsp)
  • Pizza Sauce (1 tbsp)

For Pizza Toppings:

Any topping of your choice like Capsicum (use colourful ones), onion, corn, olives, paneer cubes

Recipe:

Toppings: Cut all the vegetables and keep aside

Pizza Dough: Add all pizza base ingredients and knead soft dough, don’t forget to beat the dough enough to get better result with pizza base.

There are two steps to follow for making cheese burst pizza. First make three portions out of dough.

Take one portion and roll a chapati out of it. Heat tawa and bake chapati on it till small bubbles form it. Just a little, do not over bake it.

Take two portions and combine dough & roll chapati out of it. *Tip: Bigger portion chapati must be bigger then the one portion chapati.

Now take the bigger chapati, prick the chapati with fork and spread cheese over it. *Tip: Use cheese spread instead of grated cheese to reduce the cooking time, result will be same & awesome instead.

Till the time we make other base preparation, take one kadai, fill it with 250 gm salt (I have used chocolate flavored salt, kidding after multiple use your salt is going to look same as mine), cover it with lead and keep it on high flame to preheat process. So when we prepare our base, preheat process will be completed side by side.

Cover with small chapati, fold bigger one, seal it and prick the chapati with fork. Now spread sauces of your choice as pizza sauce. You can use homemade pizza sauce also. *Tip: User all the mentioned sauces to get best result.

Spread loads of cheese on it. *Tip: Use Mozzarella & Cheddar cheese mixed to get melted cheese look like restaurant one. You can also use ready made pizza cheese available in the market.

Add topping of your choice and again spread grated cheese on top of it. Sprinkle some Herbs (red chilli flakes & Oregano). Brush the sides of pizza base with olive oil or melted butter. *Tip: you can use regular oil too.

Now carefully open the preheat kadai and transfer your pizza to it. *Tip: Use separator / stand to keep distance between pizza & salt in kadai.

Bake for12-15 minutes and your yummiest cheese pizza is ready to serve. *Tip: check the cheese on top if it is melted properly to check, it is ready to serve or not.
